Marcus Berndt, Executive Chef at Provenir, the spectacular restaurant at award-winning Paihia Beach Resort & Spa, is in the running for the prestigious Silver Fern Farms Premier Selection Awards.

 

Now in their fourth year, the Silver Fern Farms Premier Selection Awards are a nationwide showcase for 72 of New Zealand’s best chefs, who are invited to create an original dish using Silver Fern Farms red meat cuts of beef, lamb or venison.

 

Marcus’s entry which is currently one of his signature dishes on the delectable Provenir menu, is a combination of spring lamb, rosemary, sweetbreads, mustard, baby beets, smoked kumara, sheep’s milk, garlic and elderflower jus.

 

A team of more than 30 experienced food experts, overseen by returning judging coordinator Kerry Tyack, will assess the entries to find the top 12 red meat dishes in New Zealand.

 

“It’s a blind test and I won’t know when they will come to the restaurant until they start asking a lot of questions, so I guess I will realise then,” says Marcus when speaking to the Northern Advocate.

 

The German-born Executive Chef Marcus Berndt, who was the only chef in the far North to enter the competition, has a true passion for New Zealand and the produce grown here. After working in Germany and Switzerland he found himself visiting New Zealand but not wanting to leave. 

 

Marcus has already had great success heading the team at Provenir.  In 2005 he was awarded a gold medal in the Best Pork category in the New Zealand Culinary awards.
