How Proper Pizza Achieve Their World Famous Gourmet Pizzas

Proper Pizza focuses on using traditional flavours in their gourmet pizzas, and the  combination of their European roots and new-style ideas has created a gourmet niche for them in New Zealand. By melding traditional and new flavours, they have followed a technique that has been mastered by Michelin-star restaurants all over the world.  

Proper make traditional gourmet pizzas with a twist. As they say, “We don’t claim to be the masters of pizza here, but we do know how to make a dish that gets people to come back for more. A couple of our pizzas truly emulate that combination of traditional and gourmet flavours, so we’ve broken them down below to get your mouth watering”. 

Take for instance, their Black Truffle Pizza, which is their best seller by far. They put a lot of effort into creating the perfect mix of flavours on this one. Rather than sticking to a traditional cheese for the base we picked up a scamorza, pecorino, and Parmigiano Reggiano medley that provides a warm undercurrent of earthy flavour. Thanks to the Parmigiano there’s a welcome bite, and the earthy richness of the black truffle oil combines with the mushrooms for a filling, satisfying, memorable slice. 

Proper’s second most famous gourmet pizza is The Pepperoni, with a whole lot of tradition, with just a little bit of a twist. They use salami, with their traditional Proper cheese and marinara sauce, but there’s something hiding in plain sight. This is their  

handmade ghost pepper oil which creates a wonderful, unexpected kick of flavour that pairs with the rush of chilli-endorphins.
